Chef Idol Competition puts Fish on the School Meals Menus

James Nicklin from Willerby and Callum Williams from Hull have been named as East Yorkshire's Commercial Chef Idols. The pair with their innovative 'In the Basket' concept, a breadcrumb cake containing creamy mash, poached Pollack and garden pea guacamole, won over a panel of judges headed by the One Show's resident foodie Jay Rayner.

18 catering students from Hull and East Riding Colleges took part in the Competition sponsored by Hull's Malmo Food Park, the region's number one food technology centre, to create a new product that will inspire kids to eat more fish.
New government targets being introduced mean that fish must be available once a week in primary schools and oily fish should be available at least once every three weeks. In addition, the government's nutritional standards guidelines interestingly state that children should be eating a maximum of two fried items a week.
Students presented their meals 'Dragon's Den' style to a panel of industry experts, including One Show resident foodie and Observer restaurant critic Jay Rayner, Winteringham Fields Chef Slawek Mikolajczyk, 3 Oceans development chef John Kermode and Rachel Field of Malmo Food Park.
Contestants were asked to devise a new sustainable fish based product aimed at children and potentially, school meal programmes. The recipe should be tasty, use sustainable fish and reflect the trend for healthy eating. It should be creative and show an understanding of what children will eat—and please the parents that feed them.
Jay Rayner said, 'James and Callum gave an excellent presentation, and we thought the concept was well researched and executed. They had given some thought to how the production of the product would be scaled up and didn't buckle under pressure.'
'It's not easy getting your kids to eat their fair share of healthy food. Kids are a tough audience and it was quite a challenge to devise something new to the market.'
Rachel Field from Malmo Park adds: 'Malmo Park is all about helping out entrepreneurs to start up in the food industry, so this competition is a great way for the food industry experts of today to help the development chefs of tomorrow.'
